there's dudes that fake the blues, and dudes that live it. stanley is definitely the latter. i think you can hear that authentic blues feel without necessarily involving standard cliches or licks. that's one of the things that makes this record so damn smoov. he kinda harkens back to a pre-bebop saxophone language that doesn't dwell in advanced harmonics, chord substitutions or any of that fancy shit. it's more of a gospel/R&B vibe that draws on that vocal/storytelling tradition.
i'd guess the other thing is that the 3 Sounds are a BAND. they have a real tight chemistry, probably toured + recorded together a ton. so it's not just some cats that met up for a random studio date. they're minimal + elegant, no flash but all fire, just serving exactly what the music needs + nothing more. it's kind of amazing how little the drummer is playing at some points, but it's perfect. i hear a lot of space, restraint + subtlety, implying rather than stating outright. it reminds me a bit of al green records, where the backing band just plays with great feel but totally minimal, giving the perfect cushion for reverend al to just preach on top.
i totally get what you mean though about why this works where other records don't. it's ultimately a mystery.

sick ridiculous female-fronted belgian prog rock record, the band's only release, obscure as hell. the first song is my favourite. this band is a five-piece: sax bass drums keys. no guitar! i can dig it!
